i have nexus 5 mobile phone , installed ubuntu touch on (based on ubuntu 15). want encrypt voice out of device when use phone application. possible , how?

no, that's not possible: standard phone application uses 25-year-old technology low bandwidth , not suited encryption. (9600 baud little add encryption)
